Dr. Nicole Caridad Ralston known on Instagram as @eatenpathnola started blogging and writing about food when she moved to New Orleans in 2012. She was convinced to start her Instagram after a (then) Xavier University student, Eliqua, interviewed her because she loved her food Tumblr (also called Off the Eaten Path NOLA). After the interview, she suggested that Nicole start a food Instagram, and that's how it all began! Her full time work involves equity inclusion, and social justice work with students and educators.
